The Simpleton’s Chicken-Kebabs


I’m back, no more sickly feelings, and hopefully it stays that way forever! Unlikely, I know.

This evening I’ve made something simple, but let it be well known BEFORE we get into the process that it is a bit tedious and it is time consuming. If you do not have the time to sit down and arrange all of these- you do not want to make this recipe tonight. Try something else.

For this recipe you will need:

1 package chicken thighs, sliced into medium sized chunks

1 red onion, chopped into large pieces

3 bell peppers, yellow, red and green- chopped into large pieces

16 mushrooms, sliced

3 cups olive oil

1 tbsp oregano

2 tbsp sriracha sauce

1 tbsp dill weed

2 tbsp minced garlic

Wooden skewers

Step 1:

Arrange each skewer by adding vegetables and meat in rotation. Do this until you’ve got the skewer filled with just the bottom and top ends poking out.

Step 2:

Mix together the oil, sauce, and herbs. Add garlic and mix all together.

Step 3:

These are delicious BBQ’d- so fire it up! Lay out the kabobs in a dish and pour your sauce over them. This will infuse them with flavour and help them from getting dry on the BBQ.



Yes, it really is that simple. And yes- they really are delicious
