This is literally one of the easiest recipes I’ve probably ever done. It’s healthy, delicious, and for any level of cooking expertise. I’ve made enough for everyone plus staff, so there is quite a bit here. You can modify the recipe as needed.
You will need:
3 red peppers, chopped
2 green peppers, chopped
2 red onions, chopped
1 package fajita seasoning
2 packages boneless beef cuts, cut into thin strips
3 cups mild salsa
Now, really the only thing that is important with this is the order in which you put it in the crock.
Start with your peppers, lining the bottom of the crock with them. Lay your onion bits on top.
Pour the salsa over top of the vegetables.
Lay the strips of beef on top of this now, and sprinkle the seasoning over the top of the beef.
Voila…that’s it. Once you’re ready to turn it on, you can either use it on low for 7-8 hours (perfect for my work, the duration of the shift before supper) or in high for 4-5 hours.
