The Simpleton’s Beef Roast and Veggies

Looks delicious before it’s even cooked. I don’t suggest eating before cooking…

The title says it all. You could do this blind. And it tastes like you really did know what you were doing. Yay.

You will need:

  • 1 beef roast, thawed
  • 1 red onion, chopped
  • 2 red peppers, chopped
  • 2 carrots, diced
  • 2 cups mixed broccoli and cauliflower
  • 2tbsp olive oil
  • 1tbsp sage
  • 1tbsp oregano
  • 1tbsp basil
  • 1tsp balsamic vinegar
  • Salt and pepper
  • 1 cube beef bouillon
  • 2 cups boiling water

Preheat your oven to 375F


Step 1: 

Mix all vegetables and arrange with a hole in the middle at the bottom of a roasting pan. Mix sage, oregano, basil together and cover vegetables. Leave a small amount aside.


Step 2:

Boil your water, add bouillon cube, and pour into bottom of roasting pan.


Step 3:

Place roast in the center of the pan, in the hole you dug earlier. Pour olive oil over roast. Sprinkle balsamic vinegar over the oil. Rub roast with remainder of your herb mix. Top with salt and pepper to taste.


Step 4:

Cook in preheated oven for about 1 hour, or until desired tenderness is achieved. Keep an eye that the roasting pan doesn’t go dry, and add water when appropriate.
