Meatloaf Cupcakes with Mashed Potato Icing


The ending result! The people I support loved these bad boys, it’s like dessert only for supper. And healthy. And good looking 😉


These are lots of fun to eat. It made dinner into almost a game which in a developmentally disabled home is something that helped out a lot! Everyone ate them allllll up!


You will need:

  • 2 lbs ground beef
  • 4 slices bread, crumbled
  • 2 eggs
  • 1/3 cup of milk (meat)
  • 1tbsp oregano
  • 1tbsp basil
  • 3tbsp sriracha sauce
  • 4 garlic cloves, grated
  • 1/2 onion, finely chopped
  • 1tsp garlic salt
  • 6 potatoes, sliced into thin slices
  • 1/3 cup milk (potatoes)
  • 1tbsp butter
  • 1tbsp rosemary
  • 1tbsp dillweed
  • 1tsp paprika
  • cupcake trays-large or small depending on the size of cupcakes you’d like to have

Preheat oven to 425F


Step 1:

Combine meat, bread crumbs, eggs, and milk in a large bowl. Mixing with your hands, add in the oregano, basil, and garlic. Mix in the sriracha sauce.


Step 2:

Lightly grease your cupcake pans. Make sure they’re greased all around or the cupcakes will rip and be stupid. Once greased, fill them 1/4 inch from the top of the pan. Put in oven and cook for 40 minutes. When they’re done, set them aside.

Step 3:

While your meatcakes are cooking in the oven, put your sliced potatoes into a pot of boiling water. Once they are soft, take them out of the pot and strain all of the water away. Return to pot, but turn off heat.


Step 4:

Mash your potatoes using whichever method best suits you. Using a whisk, whisk in the milk, butter, garlic salt, rosemeary, and dillweed.


Step 5:

Remove all of the meatcakes from the trays and place them lined up on a serving tray, ready for their frosting!


Step 6:

Using an icing bag, or milk bag if you’re frugal and Canadian, or a ziploc bag, fill it with the potato mix. Cut one of the corners off of the bag, making sure there is enough room for the potato mix to squeeze out. Using this device, ice the tops of the meatcakes like you would regular cupcakes.


Step 7:

Sprinkle the potato tops with the paprika. Serve!



They’re interesting to look at, fun to eat, and absolutely delicious!
