CJ’s Signature Meatballs

This recipe has been made famous within my workplace. I get weekly requests, and endless compliments. I originally started making them because one of the men I support calls me a meatball all the time and I thought it would be funny to make him some meatballs for supper! This recipe does make enough for all 6 residents, along with the staff supporting on shift that day.

Prep time: 15 mins

Cook time: 45 mins

TOTAL TIME: 1 hour

For this recipe you will need:

  • 2lbs beef/pork groud combo (thawed)
  • 4 slices bread
  • 2 eggs
  • 1/3 cup milk
  • 1tbsp oregano
  • 1tbsp basil
  • 3tbsp sriracha sauce
  • 4 cloves garlic, grated
  • 1/2 onion, finely chopped
  • 1tsp garlic salt

Preheat oven to 425F

 

Step 1:

Rip up bread until it is small enough to be large crumbs. Add oregano, basil, garlic salt, eggs and milk. Mix together.

 

Step 2:

In a separate bowl, rip up meat. Add garlic, onion, and sriracha sauce. Knead the meat mixture together.

 

Step 3:

Combine bread mix and meat mix together. Knead so both mixtures are evenly distributed throughout eachother.

 

Step 4:

Roll balls out of your mixture and place on a baking sheet lined with tin foil. Cook for 45 minutes.
